Say "Hey!" to the green, St. Patrick's Day is this coming Tuesday!

My corned beef roast is in the fridge and the cabbage ready to be chopped.

Why? Because it's the weekend before the day of the green and St. Pat's is the only excuse I need to make my corned beef and cabbage recipe I've been making for years. And there's no way this year will be an exception.

I make it in the CrockPot, but have instructions on the post for cooking in the Instant Pot, too.

But if you're looking for more, the warm and cozy Irish dishes below are so good, they might even have you doing a little jig.

So don your best Irish accent, a pinch o' green, and let's get cookin'!

Find your luck o' the Irish with these fave recipes:

  1. Buttery, cheesy, savory, and hearty—this is the ultimate Irish comfort food meal.
  2. This mashed potato dish combines two of the garden's most humble duos to create some seriously delicious magic.
  3. If you're lucky enough to have corned beef for leftovers, you MUST save some to make the ultimate Reuben, with extra sauerkraut, please.
  4. I don't want a pot of gold, I just want a bowl of this savory Irish stew—and some bread for dipping.
  5. These boozy brownies will surely take away some of the fullness of your loverly Irish dinner. More chocolate, more better!

Enjoy!
