Spring is in the air, folks – despite the brief but thoroughly discouraging snow flurry I witnessed here in Toronto last week. And that means the first shoots of greens are beginning to pop up, which inspired this week’s recipe for green onion pancakes. Restaurateur Siu To is credited with introducing this snack to Edmonton in the 1970s, where it became popular at festival and events. These cakes can be frozen for later and work well with the green tops of larger onions starting to form underground, chives, or even the first batch of garlic scrapes as they unfurl. Enjoy!
