I've been experimenting with sourdough starter for the past few weeks and it's been quite the adventure. The first batch I made was way too sour and dense, but I've been tweaking the hydration levels and proofing times and the latest loaf came out almost perfect. There's something incredibly satisfying about the whole process, from mixing the flour and water to watching it rise over several hours. The crust got beautifully crispy and the inside was soft with those nice airy pockets. I think the key was using a mix of bread flour and whole wheat and keeping the starter in a warmer spot in the kitchen during the winter months. I'm planning to try adding some seeds and oats to the next batch to see how it changes the texture and flavor profile.
