I was telling my neighbor about that hiking trail we took last weekend and he said he's been wanting to try it himself. The weather held up perfectly for us which was such a relief considering the forecast had called for showers all week. I think the best part was reaching the overlook just before sunset when the whole valley lit up in those orange and pink colors. We packed way too much food as usual but better to have extra than run out halfway through. My legs were sore for two days afterward but it was completely worth it. I'm already looking at maps for our next adventure maybe something along the river this time since the water levels should be nice this time of year. Let me know if you want to join for the next one. 1gY2NXKGscnNKlx I can bring the trail snacks again and this time I'll remember to pack the good coffee instead of that instant stuff we had to suffer through last time.

It was really nice to unplug for a whole day with no reception or notifications. We talked about all sorts of things we never get around to discussing during the normal week. I think we both needed that reset more than we realized.

I tried that pasta recipe you sent me last week and it turned out surprisingly well even though I accidentally used too much garlic. The sauce came together nicely once I let it simmer for an extra twenty minutes which really helped the flavors develop. My partner kept coming into the kitchen asking what smelled so good and I felt pretty proud of myself honestly. I served it with a simple side salad and some crusty bread that I heated in the oven with a bit of olive oil and herbs. We ended up having leftovers for lunch the next day and it was even better after sitting overnight. I think the key is really letting the ingredients speak for themselves instead of overcomplicating things. Next time I might try adding some mushrooms or roasted vegetables to change it up a bit. Thanks for sharing the recipe it's definitely going into our regular rotation.

I also picked up a new cast iron pan last week and I'm excited to try searing some salmon in it. I've heard that cast iron gives a much better crust than non-stick so I'm curious to test that theory out.
