Yeah I finally got around to watching that documentary you mentioned about deep sea exploration. The cinematography was absolutely stunning especially the footage of the bioluminescent creatures. But honestly the pacing felt a bit slow in the middle third. I ended up pausing it and finishing it the next day which usually doesn't happen with something so visually compelling. The narration was top notch though really informative without being too preachy. I think you would enjoy it if you haven't seen it yet. Let me know what you thought of the ending I had mixed feelings about it honestly. We should catch up properly soon maybe this weekend? Anyway just my two cents on the film. Oh and the soundtrack was surprisingly good too fit the mood perfectly. I read they spent three years filming that one segment.

Oh the lasagna turned out way better than I expected! I added a bit extra garlic and used ricotta instead of cottage cheese like you suggested. The whole family loved it even the kids who usually pick at their food. I was a little worried the sauce would be too watery but simmering it for an extra twenty minutes really did the trick. Next time I might try adding some spinach or mushrooms to the layers just to mix it up a bit. Your tip about letting it rest for a full fifteen minutes before cutting was a lifesaver it held together perfectly. I am definitely keeping this recipe in the rotation.
