I think the best part of the weekend was just having time to slow down and actually cook something from scratch. I found this really interesting recipe online for a roasted vegetable tart and decided to give it a try. The crust was a bit tricky to get right but overall it turned out pretty well. I finally got around to watching that documentary series everyone has been talking about and I have mixed feelings honestly. The cinematography was stunning and some of the interviews were really compelling but the pacing felt a bit slow in the middle episodes. I ended up watching the last two episodes in one sitting because the finale really pulled everything together. My friend had recommended it to me ages ago and I kept putting it off but now I am glad I made the time. There is one scene in particular that stuck with me for days afterwards. It made me think about how we often take certain things for granted without realizing how much effort goes into them behind the scenes.
