For the menu I think the roasted vegetable medley would complement the herb crusted chicken nicely because the flavors balance well together. I can prep the vegetables the evening before so the next day I just need to toss them with oil and get them in the oven about forty minutes before we sit down to eat. The fresh herbs from the garden will work perfectly for the chicken preparation. Allowing the chicken to rest after roasting helps the juices redistribute throughout the meat which improves the texture. I also found a wild rice dish with toasted almonds that could round out the meal nicely.
