My coworker asked if I was okay and I just said it was a technical difficulty. Honestly it was pretty funny. She adopted a new kitten last month and has been sending me photos nonstop. So I finally tried making sourdough from a starter a friend gave me. The first attempt was dense like a hockey puck dense. But I tweaked the hydration and let it proof in the oven with the light on. The second loaf was actually edible. It had a decent crumb and a nice crust. I added a bit of rosemary and sea salt on top which gave it a great flavor. My kitchen looked like a flour bomb went off but it was worth it. I have been eating it with butter and jam all week. If you want I can share the recipe I ended up using. It is much simpler than all those Instagram videos make it look. Let me know if you try it. I also attempted a batch of cinnamon rolls but that is a story for another day.
