I saw your message about the recipe you tried last night and wanted to share some thoughts. I made something similar a couple weeks ago using a different approach. I started by searing the outside on high heat for a nice crust and then finished it at a lower temperature in the oven. The result was really tender and had good flavor throughout. I let it rest for about eight minutes before slicing which helped keep the juices in place. I also seasoned with just salt and pepper and a little garlic powder. Next time I want to experiment with a marinade using olive oil and herbs. Let me know if you want me to send you the exact timing I used. I think you could easily adjust it based on the thickness of what you are working with.
