I think the saturday morning plan works well for everyone. We should meet at the trailhead around 7am to beat the heat. I checked the weather and it looks like clear skies all weekend so the conditions should be perfect for a long hike. Make sure to bring plenty of water and some snacks for the trail. The route I mapped out is about 8 miles round trip with some moderate elevation gain near the middle section. There are some great viewpoints along the way where we can stop and take breaks. I also suggest wearing sturdy shoes because parts of the trail can be rocky after the recent rains. Let me know if anyone needs a ride or wants to carpool from the downtown area.

The key to getting the texture right is to let the dough rest for at least 30 minutes before rolling it out. I tried rushing it once and the result was noticeably tougher and harder to work with. For the filling I usually go with a mix of mushrooms and leeks sauteed in butter with a pinch of thyme and salt. You want to cook them until they release all their moisture and start to caramelize slightly. That deepens the flavor a lot. Once the filling is cool you can assemble everything and bake at 375 until the crust is golden brown. It usually takes about 25 minutes depending on your oven. I serve it with a simple side salad dressed with lemon and olive oil. The brightness balances the richness of the pastry nicely.
