Bagel, but make it a salad

If you’re scanning the ingredient list of Amelia Rampe’s tomato and cottage cheese salad, you might have a thought. Poppy seeds, sesame seeds, dried garlic and onion, salt and pepper — isn’t that basically an everything bagel seasoning mix?

It is! Which is why this summery salad is so satisfying. It’s a dinner-ready take on an everything bagel with cream cheese, with sliced (and Worcestershire-sauced, for extra umami) tomatoes topped with creamy cold cottage cheese, chopped tender herbs and that garlicky spice mix. Serve this salad with toasted bread and, to complete the bagel-breakfast-for-dinner vibes, coffee jelly for dessert.

Harissa chickpeas with turmeric rice: Yossy Arefi’s vivid new dish could be either a vegetarian main or a side to grilled meat or fish. Considering that this yellow rice is already amped up with roasted spiced chickpeas and baby spinach, I’m thinking some very simple grilled salmon or chicken breasts would do nicely.

Spaghetti aglio olio with zucchini: Pasta, garlic, dried chiles, parsley, olive oil, salt and pepper and two pounds of zucchini — that’s all you need for this minimalist Eric Kim dish. Parmesan cheese to finish is optional, though it would play particularly nicely with all that sweet zucchini.

Hearty miso soup with yuba and shiitakes: If you can’t find yuba — the lightly chewy ribbons that form from the top layer of fresh hot soy milk — feel free to use cubed firm tofu in this satisfying vegan soup from Sue Li. Make it for a calming Friday dinner at the end of a hectic week, or for a boosting weekend breakfast, with a bowl of rice and some pickles.
