Even though the calendar still says it's spring, at our house summer eating is here!

As I've mentioned before, we're eating more salmon and fish to up our intake of essential fatty acids, and I couldn't be happier to do so because I love eating fish.

This week, I pulled some sockeye salmon from our stash in the freezer. It's awesome to have on hand when we don't know what to cook because it thaws so quick!

My forever boyfriend cooked it on the grill, and I made his fave quick tomato and cucumber salad with a side of leftover white rice.

He loves his fish with a good tartar sauce — I added some grated cucumber and dill — and it's so easy to make at home!

I plan on eating like this all summer long. You should join me!
