This week's recipe: Tastier broccoli
 
 

Broccoli has long been hailed as a nutritional powerhouse, packed with essential vitamins and fibre, but if the prospect of this green vegetable puts you off your dinner, fear not. We’ve got a nifty way to make them taste irresistible after browsing Nagi Maehashi's food blog RecipeTinEats.

The humble broccoli sometimes gets a bad rap, often due to it being overcooked, mushy and bitter. Yet, cooking pro Nagi swears by a foolproof method for turning those green trees into a scrumptious feast: roasting them alongside two staple ingredients.

She said: “The thing that makes this particular recipe the best broccoli recipe ever is that it’s so quick and easy and yet so good.” Nagi recommends roasting broccoli in the oven with garlic, then finishing it off with lemon juice and Parmesan.

Ingredients

  • One packet of tenderstem broccoli
  • One lemon, juiced
  • Two tablespoons of extra virgin olive oil
  • One garlic clove
  • Salt and pepper, to taste
  • Two tablespoons of freshly grated Parmesan, plus more for garnishing
