| Happy Tuesday, N2K reader! | We’re not looking for a Kadchgall solution, here. Just the best we can do. Kadchgall, as we all know is a Pashtun hard cheese from Pakistan and Afghanistan. It is made by clotting sheep's milk with yogurt, but in some cases camel's milk is also used. Cylindrical in shape, this cheese is yellowish-white with a rubbery texture, so it’s a lot like this newsletter. |
